Era la metà degli anni Ottanta quando con Osvaldo decidemmo di far rivivere l’antica Locanda San Lorenzo, costruita da nostro nonno all’inizio del secolo scorso come ultima stazione di sosta dei cavalli e delle carrozze dirette alla foresta del Cansiglio.
Volemmo ricreare l’atmosfera e il calore familiare dei primi del Novecento e valorizzare l’importanza dei sapori tradizionali, armonizzati con fantasia dalla genuinità dei prodotti locali, come l’agnello dell’Alpago, il pesce del Lago di Santa Croce e i formaggi delle vicine malghe.
Sempre senza trascurare l’innovazione e la ricerca, perché noi della Locanda San Lorenzo crediamo nell’importanza del mangiare bene e dei prodotti di prima e assoluta qualità, crediamo nella continua evoluzione culinaria e nell’offerta di sapori e prodotti del territorio, sapori tradizionali eppure sempre nuovi.

It was the mid-Eighties when, together with Osvaldo, we decided to bring the old San Lorenzo Locanda, or Inn, back to life. Our grandfather had built the Locanda at the beginning of the last century, as the last stop at which the horses and carriages headed for the Cansiglio forest could rest.
We wanted to recreate the atmosphere and intimate warmth of the early twentieth-century and also to emphasize the importance of traditional dishes creatively complemented by the wholesomeness of local produce, such as lamb from the Alpago valley, fish from the Lake of Santa Croce and the cheeses from the nearby “malghe” or shepherds’ huts.
All this without ever neglecting innovation and research, because all of us at the San Lorenzo Locanda believe in the importance of eating well and of using absolute prime quality produce; we believe in constant culinary progress and in offering flavours and products typical of the territory, flavours which are traditional yet always new.
